 Bayoudog Kingfish

I can’t claim this as an original recipe-I found it on another fishing board by an author who goes by Bayoudog. I’ve found it to be an excellent way to serve kingfish. The ingredients sound a little out of the ordinary but the taste is really very good. I consider this one of my solid recipes. As the original author stated “Try this recipe (real fast & easy) and I guarantee that you will never want to release another King again”.

 

Bayoudog Kingfish 

2 lbs. Kingfish boneless meat, cubed 1" (no dark bloodline).

In a pan, combine:

                    1/4 cup olive oil

                    1 large onion

                    3 cloves garlic

                    About a handful cilantro (all chopped fine)

                    1 teaspoon each of salt, curry powder, cumin powder.  

Sauté, until tender & transparent. Then add 2 tablespoonful of peanut butter & about 1/2 cup water. Stir until you get a good sauce (about 3 minutes). Throw the kingfish in and cook until it boils (about 5 - 6 minutes). Do not over cook. Serve over a bed of rice.                           
Takes About 15 MINUTES EXCELLENT DISH. 

 

Dale Sauce Kings

For kings i merinate the steaks for about 15 minutes in Dales Sauce, wrap a piece of bacon around (to give it a little moisture since king meat dries out fast) and grille on low until done. Excellent taste. 

Warning: the fish will stick to the grille. I usually put some aluminum foil on the grille, cut slices between the grating and spray w/ a non-stick cooking oil. Also works great with striper.
